Ham Casserole

was one of my favorite meals
when I was growing up. I
thought
it was my Mother’s recipe. But I was just going through some ole
recipe files
and this popped up with my Grandmother, Stella Lincoln’s name on
it. It is my Mom’s
handwriting, though.
It’s
still one of my favorites.

"Stella Lincoln’s Ham Casserole"
“Cook Ham slightly
to brown in skillet. Remove ham and sauté onions, then
add stewed (can’t
read it) tomatoes & drained
can of peas.—Bake
350
45 minutes &
serve---or can
Cook slowly (all together)
in skillet"

can? I guess they would can it like we did fruits and
vegetables.
It says “bake” and
then “in skillet” I
remember my
Mom doing it in a heavy old iron skillet and that’s how I do it.
I’ve been doing it
from memory but it
was pretty close.
Like so many of the old
recipes, very few or no amounts are given.
But, I use a two (or so) cups of ham, a medium
yellow onion, chopped, a 15ish oz. can
of stewed tomatoes and the same size can of peas.
My
Mom cut the ham in pieces
about 2 x 3 inches. I
cut them
smaller because I’m lazy and don’t want to cut them while I’m
eating.
