Asparagus
Kay Depew
Asparagus cut into about 1 inch pieces and thick ends peeled and cut
½ stick of butter
Water to cover the bottom of the pan about ¼ inch
Salt & Pepper
In a large frying pan, bring water and melted butter to a boil
Add asparagus and a pinch of s & p, reduce heat to med/high, cover and simmer 6 minutes.
Simmer longer for thick pieces.
NOTE Kay used to take time to peel asparagus. I don't. Takes toooo much time. I buy two bunches. Cut off the first couple of inches and toss the rest. (You know how lazy I am...)
